Gluten-free/allergy-free cookbooks, lifestyle books, and other informational resources for managing food allergies, celiac disease, autism, and other medical conditions that require a special diet. Currently, six cookbooks/lifestyle manuals are offered plus a series of four bookmarks with streamlined information on substitutes for wheat, dairy, eggs, or white sugar.

 

Consulting Services

Carol Fenster, Ph.D. also consults with food manufacturers. She developed the new line of gluten-free mixes and recipes for Bob’s Red Mill Natural Foods, Inc., a leader in the natural foods industry. She develops recipes for manufacturers and is an expert on cooking with sorghum; she delivers seminars on behalf of the U.S. Grains Council in Tokyo, Japan.

 

Her articles, recipes, and reviews of her books appear in magazines such as Woman’s World, Taste for Life, Vegetarian Times, Veggie Life, Better Nutrition, Energy Times, Gluten-Free Living, and Living Without; professional journals such as Today’s Dietitian, and newsletters from organizations such as Food Allergy and Anaphylaxis Network (FAAN), Gluten Intolerance Group, and Celiac Disease Foundation. Her recipes appear in numerous books including those published by the American Dietetic Association. York Nutritional Laboratories, an allergy testing lab, recommends her books to its patients.

 

She is a member of the International Association of Culinary Professionals, Publisher’s Marketing Association, Small Publishers of North America, and Colorado Independent Publisher’s Association.

 

She also consults with individuals, advising them on how to use foods appropriate for their special diets. Her expertise is in cooking without the traditional American ingredients of wheat, dairy, eggs, and sugar. She is also a nationally recognized speaker at national conferences and local support groups across the nation. A portion of the profits are donated to charitable causes.
